The Health Department recently contacted us with concerns about food establishments here in RI.  Re-inspection numbers increased to 26% of their total number of inspections and they reported 1,156 critical violations in the month of July 2014.   One reoccurring violation that stands out is not having a certified Food Safety Manager on premise, this is a crucial first step in providing safe food. Though only one certified manager is required by law in most businesses, they have to be on premise while a restaurant is open to the public, so chances are your business needs more than one.

Health inspections are becoming increasingly strict and with good reason.  An increase in Vibrio parahaemolyticus in New England has increased concerns about the safety of oysters and shellstock tags are becoming a hot button for inspectors.  According to the CDC in 2013 there was a 31% increase in the number of laboratory confirmed infections from this bacteria.  In recent years, Norovirus has plagued our industry, with the CDC reporting that 48% of identified food borne illness outbreaks from 2009-2012 were Norovirus.  Did you know that Norovirus is so contagious, that the amount of virus that could fit on the head of a pin is enough to infect over 1000 people? These are just two of the dangers that food establishments must work to prevent every day.

1.       We offer monthly ServSafe® Food Safety Managers Certification classes or proctor exams for those who chose to complete on-line training, a small investment to have enough people trained to cover every shift and assist in training and enforcement of regulations.

2.       We provide Kitchen Audits to identify your problem areas and Food Safety Plans, an action plan to rectify issues, promote food safety and assist with training.  These tools can help reduce your stress, whether you have had a difficult inspection or two, or are concerned about upcoming inspections. 

3.       We can teach a two hour ServSafe® Food Handlers class to your staff, important for helping your team understand Food Safety and all the “rules” that go along with it.  The training increases your staffs’ awareness and ownership, making your job easier.  We can also utilize your food safety plan in the class to provide more specific employee training for your restaurant.
